Do you have a specific GUI design in mind?
If all you have to do is connect buttons to terminal commands and adding some menu options for specific parameters to those commands, that’s probably a weekend’s worth of work with some simple graphics/form library.
The seamlessness to certain platforms might a bit bigger of a hurdle, but surely they also have some API. What kind of features would be required in the seamless integration with said platforms? I have never used a label printer so I don’t really know much about what features are needed, but at the very least I can start a GitLab repository and create a core.
Something like this?

WIFE-COMPLIANT is the main requirement. She is not a user like you and me.
Plus, has to work with Etsy and Ebay and Shopify. Seamlessly.
“Oh my mistake. Thought you said wifi compliant.”
