Like these are chemicals nature specifically designed is to be adverse to. Yet there is a not insignificant number of us that choose to indulge in them.
The crazy thing is even when it is poisonous there is an audience for any taste. People are strange, and I don’t think we ever advanced from the stage of infancy where we explore the world with our mouths. lol

Ethanol is poisonous and carcinogenic and extremely popular. Burned nicotine also of course.
People seem to love grapefruit. I can’t stand it; that bitterness tastes like vomit.
I love coffee, but despite the bitterness, not because of it. I go to lengths to brew coffee with minimum bitterness, and then usually add milk just to flatten out the remaining bitterness. I can’t tell it I just have oversensitive bitterness receptors, or what, but your comment about high IBU IPAs struck home. Can’t stand those beers, myself.
Grape fruit is a legit concern for me. It actually can nullify some medications effects.
