Business owners will absolutely NOT pay people enough to make up the difference. They may increase the prices and give token raises but id need another $6/hr or so to make up for the tip money and I’m sure the owners would rather keep that for themselves. Theres a place in town that brags about not tipping and paying a fair wage. Their hourly is a dollar more than mine

It definitely varies. There was a place I used to go to that did this and I asked one of the servers about it on a slow day. He said they were getting like 20 an hour to start (at the time that was way better than anything similar this was like mid 2010s), health insurance, and PTO. He said this ended up being better than tips because of the insurance and PTO. The place was always fully staffed and you never had to wait for service because servers would just wander around and help anyone at any table since nobody was getting tips. Food was good too and not significantly more expensive than nearby similar places. After excluding tip honestly it was probably cheaper.

Unfortunately the place burned down in some huge fire and they never re opened. It to me anyway was a good example of a place that did seem to be working pretty well on the zero tips model
