Is it possible to make the workspaces in Pop_OS loop around with the keyboard shortcuts i.e. if you are at the bottom go to the top workspace and vice versa

I think the Workspace Matrix extension allows this, but it may require a fixed number of workspaces.
You can map shortcuts to numbered workspaces, so you could map something to Workspace 1 to enable it to loop around.
